Cream of Broccoli Soup

Ingredients: Gather broccoli, onion, garlic, vegetable broth, milk or cream, butter, flour, salt, and pepper.

Preparation: Chop broccoli into florets and dice onion and garlic.

Sauté: In a pot, melt butter and sauté onion and garlic until softened.

Cook Broccoli: Add broccoli florets to the pot and cook until slightly tender.

Make Roux: Sprinkle flour over the vegetables and stir to coat. Cook for a minute to create a roux.

Simmer: Gradually pour in vegetable broth and milk or cream. Simmer until broccoli is fully cooked and soup has thickened.
