Creamy Roasted Carrot Soup

Ingredients: Gather carrots, onion, garlic, vegetable broth, coconut milk or cream, olive oil, and seasoning like thyme, cumin, salt, and pepper.

Preparation: Preheat oven and chop carrots, onion, and garlic. Toss carrots with olive oil and seasoning, then roast until tender.

Sauté: In a pot, sauté chopped onion and garlic until fragrant and softened.

Blend: Add roasted carrots and sautéed onion and garlic to a blender along with vegetable broth and coconut milk or cream. Blend until smooth.

Seasoning: Return the mixture to the pot and season with thyme, cumin, salt, and pepper. Adjust seasoning to taste.

Simmer and Serve: Simmer the soup for a few minutes to allow flavors to meld.
