How to Make Pie Crust Cookies

Step 1: Roll out the pie dough Prepare a baking sheet by lining it with parchment paper. Preheat the oven to 425°F. Use a floured rolling pin to roll the dough out about 1/4 inch thick.

Step 2: Cut the cookies Use a cookie cutter to cut circles out of the dough. Transfer each piece of dough to the prepared baking sheet.

Step 4: Sprinkle with cinnamon sugar In another small bowl, mix together the granulated sugar, brown sugar and cinnamon. Generously sprinkle each cookie with the cinnamon sugar mixture.

Step 5: Bake the cookies Transfer the baking sheet to the oven. Bake for 12 minutes until the cookies are fluffy and the tops are golden.

Remove from the oven and allow the cookies to cool for 10 minutes on the baking sheet before transferring to a rack to finish cooling.
